As we all know that potato is a versatile vegetable and eaten throughout the world.Thousands of dishes are made with this, across the globe.The humble potato can be paired easily with any other vegetable or cooked Individually.One such dish I am sharing today is prepared with potato using mozzarella cheese
This dish can be served as a starter or an evening snack
INGREDIENTES –
potatoes – 2 nos.

Finely chopped onions – 1 medium sized.
Chopped garlic – 2 teaspoons
Fresh tomato purée – 2 tablespoon
Salt, pepper, red chilly flakes and dried herbs – tastewise.
Grated mozzarella cheese – 1/4 cup.
Oil – 2 teaspoons.preparation time 15 min.

Method – First of all, boil potatoes up to 90%.(They should not be too soft).
When cooled, cut in half lengthwise and scoop out some from the middle with a spoon
.
Heat oil and add garlic and sauté.
Add chopped onions and stir.
Add tomato purée, salt, pepper and herbs.
Add scooped out boiled potatoes and mix.
When cooled add half of the cheese and mix.
Spread remaining cheese over potatoes and cook in a pan adding little oil.Cover the pan with the lid
