Fish and chips is one of the fondest memories during my Australia trip. I wanted to eat this classic British delicacy since long and the dish I got to have on some of the outlets (don’t remember the name) was so amazing that I still start drooling at the thought of that. Though we eat roasted fish or fish tikka( fish roasted in a clay tandoor) a lot during winters(a fresh and good quality is available during winters here in Delhi) but the taste of a fried fish is unmatched. Although the deep-fried versions are not much healthier but cheat meals work at their best sometimes
Back home I gave a try to this classic dish, but with a twist. I replaced potato chips with Zucchini Chips as I am fond of this gourd. The fish filets were given simple marination before frying. The batter was prepared with two kinds of flours and chilled soda water(skipped eggs) made the flaky fish crunchier and flakier. Zucchini chips with fried fish made a wonderful combo to place it on the top of my favourite menu

Ingredients For Fried Fish
1- Fresh Fish fillets ( Any boneless fish. I used surmai/Rawas/Indian salmon fish) – 3-4 or 250 gms
2- Maida/refined flour – 1 cup/ 150 gms
3- Rice flour – 2 tbsps /30 gms
4- Chilled soda water – sufficient enough to make a medium thick batter
5- Salt – 1 tsp or to taste
6- Garlic powder – 1 tsp or to taste
7- Onion powder – 1 tsp or to taste
8- All-purpose Italian seasoning – 1 tsp or to taste
9- Oil for frying
Ingredients for Marination
1- Salt – 1
2- Black pepper powder – 1
3- Lemon juice – 1 tbsp or from 1 lemon
Instructions for marination
1- Wash the fish fillets well and wipe with a clean kitchen towel
2- Rub salt, pepper powder and lemon juice both sides on the filets and refrigerate for 10 minutes. Whilest prepare the batter
Instructions for frying the fish
1- Heat oil in a kadahi at medium-high flame
2- Take a broad bowl and add maida, rice flour, salt, garlic, onion powder and Italian seasoning. Mix everything well and add chilled sodawater little at a time. Make sure the batter is not too runny
°This instant batter does not require resting as the fizz starts reducing fast
3- Dip the fish fillets into the batter and deep fry golden brown both side by flipping
° Fry 1 or 2 fillets at a time otherwise the temperature of oil will get down absorbing too much oil
4- when fried, take them out on an absorbent paper and serve hot. I serve this fried fish with broken wheat/dalia salad and zucchini chips to make a complete meal
