How the two very common ingredients can cook a magical dish, this METHI-CHANA DAL is a perfect example of this expression. A regular dal preparation can be an extraordinary one by adding some greens, this happened absolutely in my kitchen when I prepared this methi-chana dal fry which I had eaten in a roadside Dhaba a few years back. This was somewhere in the back of my mind which came true with nearly the same taste I had tasted. Feeling happy to share the recipe with all my readers. As the winters are bidding goodbye but fresh methi leaves are still available with the vendors. Taking the advantage I cooked this for my yesterday’s lunch. This was total bliss. In the offseason, dried methi leaves(Kasuri methi) leaves is a good substitute to use

INGREDIENTS REQUIRED FOR BOILING CHANA DAL

•  Chana dal/split Bengal gram – 1 cup
•  Water – 4 cups
•  Salt – 1 tsp
•  Haldi/turmeric powder – 1tsp

INGREDIENTS FOR METHI CHANA DAL

• Methi/fenugreak leaves – 2 cups
• Finely chopped onions – 1 big sized
• Finely chopped tomatoes – 1 medium
• Finely chopped ginger – 1 tsp
• Finely chopped garlic – 1 tsp
• Finely chopped green chillies – 1 tsp
• Ghee/oil – 1 tbsp
• Salt – 1 tsp
• Haldi/turmeric powder – 1 tsp
• Red chilly powder – 1 tsp
• Coriander powder – 1 tsp
• Garam masala – 1 tsp
• Whole jeera/cumin- 1
• Hing/Asefotida powder – 1/2 tsp

INGREDIENTS FOR GARNISH
•  Ginger Juliana – 6-8
•  Chillies(green or red) – 1-2

STEP BY STEP

STEP 1-    BOILING CHANA DAL

•  Add all the ingredients to a pressure cooker and allow 1st whistle at high flame. Bring down the flame to low and cook dal for 15- 20 minutes (timing depends on your pressure cooker)

•  Open the lid and mix the dal gently with a ladle. Prepare now to cook the remaining part of METHI-CHANA dal fry

STEP 2-    COOK METHI CHANA DAL FRY

•  Add ghee/oil to a kadahi and add jeera/cumin.allow to splatter. Next, add hing

•  Add chopped ginger-garlic. Saute for a while and add onions. Saute onions and add salt and powdered spices. Cook spices for a while and add tomatoes.Cook this masala until tomatoes get softened

•  Add methi leaves now and cook them until they become a little dry

•  Now, add cooked chana dal and give one boil until all the ingredients are incorporated

•  Garnish dal with chilly and ginger Julianne
