GREEN BEAN-SWEET CORN SALAD/A PERFECT BALANCE OF TASTE AND HEALTH
Hello Spring! And to all those dishes we love to eat in this pleasant season. The greens are above all to give relief from the heavy and greasy food taken during winters. As the winters are over, we start loving the food which is lighter and refreshing. Salad is one of them. These are great appetizers to soothe our eyes as well as the stomach with their easily digestible quality. These rainbow-hued salads have essential nutrients especially edible fibres.
Sharing today a refreshing salad which is a perfect balance of vitamins, minerals, protein and carbs. This is so filling that you can rely on it to skip your dinner. This does not require the dressing separately. The blanched beans and corns are sauteed in butter. An add of sweet corn kernels and a few fruits add the sweetness. The roasted peanuts add the crunch. All these characteristics make this salad a perfect balance of taste and health

INGREDIENTS REQUIRED FOR THE SALAD
• French beans(tender ones) – 250 gms
• Water to blanch beans – as required
• Butter/Olive oil – 1 tbsp
• Sweet corns – 1 cup
• Any fruit cut into wedges(apple, peaches or apricots etc) I used peaches
• Salt – 1/2 tsp
• Crushed black pepper – 1/4 tsp
• Lemon juice and extra virgin olive to drizzle – 1 tsp each
HOW TO MAKE GREEN BEAN-CORN SALAD
1- Firstly, keep the water for boiling. When boiled, blanch green beans and corn kernels for 2 minutes.
2- Take them out and rinse with cold water so that these do not lose the colour and crunch. Also rinse the fruits well
3- In a pan add butter. When heated, add blanched beans and corns. Saute for 2-3 minutes and add salt and pepper. Allow to cool down a little. (The buttery beans and corns taste amazing!)
4- In the same pan roast the peanuts until they get crisp and crunchier
5- In a mixing bowl combine sauted beans, blanched corns, fruit wedges and roasted peanuts
* A few drops of lemon juice and extra virgin olive oli do the magic
