
The salad is what you eat first with your eyes and then your mouth. No? This is the healthiest part of your meal. The eye-soothing salad is an appetizer too, which attracts you the most with its colourful ingredients. As many veggies or fruits as you think can make a healthy salad
This spouted moong dal salad with some other veggies does not make you feel guilty after having it. This is the best appetizer just before the main course. Sometimes I make this for breakfast also. The sprouted moong dal, used in this salad, is the healthiest one among all lentils, a storehouse of vitamin C and protein, which is good for growing kids; that’s why I include this dal a lot in my regular menu.

For this salad, I have steamed the moong dal to bring it to a softer consistency. But one can add this dal to the salad without steaming. If you don’t steam the dal, it adds a crunch to the salad along with cucumbers, radish, and juicy tomatoes. The dressing for this salad has been kept very simple, just with a dash of black pepper and lemon juice.

Ingredients Required For Salad
1- Sprouted moong (steamed or parboiled) – 1 cup
2- Cubed cucumbers – 1/4 cup
3- Cheery tomatoes (cut into halves) – 1/4cup
4- Red or white radish (sliced) – 1/4 cup (I used red ones)
5- Radish leaves(torn by hand) – a few
6- Juice of 1 lemon for dressing
7- Black pepper powder – 1 tsp
Instructions for moong sprout
1- To grow moong sprouts, you would need to soak dal for 4 hours or overnight

2- Add soaked whole moong dal in a kitchen towel and make a packet of it. Keep this packet near a window where it gets sufficient air and sunlight. Make sure that the kitchen towel is wet all the time. Within 2 days, the sprouts will grow

3- This moong sprout is ready to use raw, or you can steam or parboil with a little salt and turmeric powder until it comes to a softer consistency.


4- Take a mixing bowl and add all the ingredients mentioned above, like all the veggies, to it
Add lemon juice and sprinkle some rock salt and pepper powder just before serving
5- The super healthy and tasty sprouted moong dal salad is ready to eat
