SOOJI KI KHEER WITH THANDAI FLAVOUR/  THANDAI FLAVOURED KHEER WITH RAWA(SAMOLINA)

As the temperature rises up you crave to have something cool and light to eat or drink. And if we talk of desserts, we want to cook something with the same desire. As our Sunday lunch doesn’t complete without the home-cooked dessert, I decided to make the sooji ki kheer yesterday. The kheer is said to be the milk pudding which is cooked by thickening the milk. This pudding is prepared with sooji or rawa or samolina and is very light on the stomach during summer. To accomplish this desire, I added some thandai flavour which I had bought from the store on Holi. (Thandai is said to have a cool effect on the body during summer)

Although,  I had added all the nuts and saffron to get the thandai flavour but that thandai syrup made it tastier and very relevant to fight the rising heat. The chilled sooji kheer with thandai flavours was the ultimate bliss after a satisfying Sunday lunch

INGREDIENTS REQUIRED

• Milk  – 1 lt
• Sooji/Rawa – 100 gms /small bowl
• Sugar – 100 gms or to taste
• Chopped nuts(almonds,pistachios,raisins etc)
• Kesar/Saffron  – 8-10 strands
• Thandai syrup(store brought) – 2 tbsp

HOW TO MAKE THE KHEER

1- Keep a saucepan or heavy bottom kadahi on flame and add sooji. Dry roast the sooji at low-medium flame for 3-4 minutes

2- Next, add milk and allow it to boil at medium-high flame. Add sugar at this stage and mix well

3- When the first boil comes, reduce the flame to a possible low. Add chopped nuts and saffron strands. Stir the kheer continuously

4- Cover the pan with a lid. Allow the kheer to simmer for 7-8 minutes or until the kheer thickens. Scrape the kheer from sides with the spatula

5- Allow the kheer to cool down and add thandai syrup.  Combine well

6- Serve the tasty thandai-flavoured sooji ki kheer at room temperature or chilled
