This salad is a great combination of different flavors and textures, like tomato and apricots are soft side, walnuts have crunch, and carrots and cucumbers add freshness. Boiled chanas provide you the high high-value proteins. The dressing is not overboard with fats. This has all the contrasts, like smoked paprika balances the sweetness of honey. In fact, this dressing over Chana salad will remind you of the chatpata Chana chaat, which possesses all the flavors to satisfy your taste buds

Ingredients Required For Chickpea Salad

• Boiled chickpeas / canned – 1 cup
• Sliced red onions – 1/4 cup
• Chopped cucumbers – 1/2 cup
• Chopped tomatoes – 1/2 cup
• Sliced apricots – 1/2 cup
• A few walnut kernels for crunch


INGREDIENTS FOR DRESSING


• Extra virgin olive oil – 1 tbsp
• Juice of one lemon
• Salt to taste
• Pepper powder to taste
• Smoked peprika to taste
• Honey to taste

*If the smoked peprika is not available to you, kashmiri red chilly powder can be added. This chilly has a smoky flavour

DIRECTIONS
1- T
ake a broad bowl and add all the ingredients except those for the dressing
2- Mix everything well with a spatula
3- Add all the ingredients for dressing in a bowl and mix well to incorporate each
4- Now, drizzle the dressing over the salad and mix well. Add some walnut kernels for the crunch
*  This salad can be served chilled or at room temperature
