This salad is a combination of different textures like tomato and apricots are soft side, walnuts have crunch and carrots n cucumbers add freshness. Boiled chanas provide you the high valued proteins. The dressing is not overboarded with fats. This has all the contrasts like smoked peprika balances the sweetness of honey. In fact this dressing over Chana salad will remind you the chatpata Chana chaat, which possesses all the flavours to satisfy your taste buds

Ingredients required
• Boiled chickpeas / canned – 1 cup
• Sliced red onions – 1/4 cup
• Chopped cucumbers – 1/2 cup
• Chopped tomatoes – 1/2 cup
• Sliced apricots – 1/2 cup
• A few walnut kernals for crunch
INGREDIENTS FOR DRESSING
• Extra virgin olive oil – 1 tbsp
• Juice of one lemon
• Salt to taste
• Pepper powder to taste
• Smoked peprika to taste
• Honey to taste
*If the smoked peprika is not available to you, kashmiri red chilly powder can be added. This chilly has a smoky flavour
DIRECTIONS
1- Take a broad bowl and add all the ingredients except those for the dressing
2- Mix everything well with a spatula
3- Add all the ingredients for dressing in a bowl and mix well to incorporate each
4- Add the dressing to the salad and mix well. Add some walnut kernels for the crunch
* This salad can be served chilled or at room temperature
