GARLICKY MUSHROOM SAUCE/HOW TO MAKE A MULTI-PURPOSE MUSHROOM SAUCE

This mushroom sauce makes you happy with amazing flavours and it’s multi-purpose usage in various dishes. The mushroom itself is a versatile ingredient that comes under healthy edible fungi. This healthy ingredient can make several dishes from soups to appetizers and the main course.

Taking advantage of the versatility of mushroom, I make this interesting sauce which can be used in several dishes and tastes better when eaten with savoury pancakes, hash browns and pasta. This sauce is buttery and garlicky with mild and fragrant spices. A pinch of nutmeg is magical and the white pepper powder feels incredible in this flavoured sauce

INGREDIENTS REQUIRED

• Button mushrooms – 250 gms (chopped coarsely)
• Onions – 2-3 medium-sized(thinly sliced)
• Garlic – 5-6 cloves(minced or finely chopped)
• Milk – 1 cup(200 ml)
• Butter – 1 tbsp
• Any light cooking oil – 1 tsp
• APF/ refind flour – 1 tsp heaped /10 gms
• Salt – 1 tsp
• White pepper – 1/2 tsp
• Mixed Italian dried seasoning – 1 tsp
• Nutmeg powder – 1/4 tsp/a pinch

STEP BY STEP DIRECTIONS

1- Firstly add flour to the milk and mix well breaking the lumps. Keep aside

2- Heat butter and oil in a pan and add chopped garlic. Cook for a few seconds(Be careful not to burn it)

3 – Add chopped onions and saute until these become translucent

4- Add chopped mushrooms and cook for 2 minutes at high flame.

5- Add salt and other seasonings along with the nutmeg by grating it. Stir well

6- Add milk-flour mix and give 1 boil at medium flame. Now bring the flame to slow and stir continuously to avoid lumps

7- Cook the sauce for 2 more minutes by stirring at intervals. Cover the pan with the lid so that mushrooms get softened

8- The Garlicky Mushroom Sauce is ready to use. You may add some green herbs of your choice. I love this delectable sauce as a condiment with pasta and paneer steaks

NOTES AND TIPS

1- If the white pepper is not available to you, black pepper can be substituted with lesser quantity (being strong)

2- You can grind this sauce to make a fine mushroom puree
