This healthy salad consists of rajma/kidney beans along with some fresh vegetables and corn kernels. This salad might remind you of the Mexican salad. Roti tacos are the simplest tacos to make. Just enjoy the colourful salad with a sprinkle of lime juice and chatpata chaat masala

How To Make Roti Taco Shells

For Taco Shells you will need the medium-sized thin whole wheat or cornmeal (Makki) rotis/chapati/flatbreads

Follow a Few ways to make roti taco shells

1- Set them on a wire rack to get taco shape in 20 minutes. Just hold the hanging ends together for a few minutes. This will make a soft taco shell. For harder one leave rotis for an hour on the rack

2- An alternate method is to keep a thin rolling pin or a napkin holder between the fold to give roti a taco shell shape

3- You can adjust the roti under a muffin tray like shown in the image. Leave roti for 20 minutes to get a taco shell

INGREDIENTS FOR KIDNEY BEAN SALAD

• Boiled rajma/kidney beans – 1 cup
• Boiled corn kernels – 1/4 cup
• Cubed cucumbers – 1/4 cup
• Cubed tomatoes – 1/4 cup
• Cubed onions – 1/4 cup
• Chopped coriander leaves
• Salt – To taste
• Chaat masala – 2 tsp
• Red chilly powder – 1 tsp
• Juice of 1 lime

WALKTHROUGH

1- Mix all the ingredients in a bowl and fill into prepared roti shells

2- Sprinkle more lime juice and enjoy yummy kidney bean salad tacos
