Wheat Dalia Salad

It had been a hectic day today as the examination season is on its peak. I am in my kitchen right now, dying with hunger, yet don’t want to cook much for the main course. My ‘better half’ becomes very supportive these days to agree on such dishes which don’t consume much time n labour but must be nutritious definitely
To grab the opportunity, I immediately soaked the broken wheat dalia in hot water and started to chop a few ingredients into wedges. The task is just combining them and you have a delicious salad with citrusy flavours and some other goodies in one go

 Ingredients


1- Dalia/broken wheat – 1 cup or 100 gms
2- Water – 5 cups or 500 ml
3- Ginger – 1-inch piece
4- Olive oil – 1 tbsp
5- Finely chopped carrots – 1/4 cup
6- Finely chopped cucumber – 1/4 cup
7- Tomato wedges
8- Orange wedges and some peels
9- Boiled egg wedges
10- Fresh coriander leaves
11- Salt, pepper – to taste

Instructions

1- Keep the water for boiling and add orange peels and ginger wedges. When water is boiled add dalia/broken wheat. Cover with a lid and leave for 30 minutes to allow it to absorb the liquid

2- When all the water is absorbed, dalia is soft and swollen now. Scratch it with a fork to separate each grain. Remove the orange peels and ginger wedges now, dalia has gained its aroma and flavours

3- Heat oil in a kadahi and add chopped garlic followed by chopped carrot. Stir fry both for a while and switch off the flame. Add softened dalia to stir fried carrots and mix

4- Next, add all the chopped veggies, herbs and wedges of eggs and oranges. Add salt and pepper just before serving

°  This salad is ready to be served warm or at room temperature
