
CORN-MANGO SALSA / SALAD
This Corn-Mango Salsa is a mix of rainbow-hued veggies + mangoes + corn kernels and buttery corncobs. This salad will remind you of the Mexican Salsa for the key ingredients I have used to prepare this salad
This healthy salad is one of the best appetizers, I have ever prepared. The salsa has all the flavours to satisfy your taste buds. Riped mangoes add a sweet note to it. Corncobs and the kernels are also sweeter, so I added red chilly powder while steaming and tempering the corncob to balance the flavours. Tangy pickled onions are flavoured with 2 types of peppers and cinnamon to give a kick to the salad. On the whole, this corn-mango salsa is a complete package of contrasts of colours, tastes and flavours. Hope you would love to make this salsa
ON TO THE RECIPE

● INGREDIENTS REQUIRED FOR STEAMED CORN COBB
• Corn cobbs – 2 nos
• Water – As required to submerge the cobbs in the cooker for boiling
• Salt – 1 tsp
• Red chilly powder – 1/4 tsp+ 1/4 for
● INGREDIENTS FOR TEMPERING THE CORNCOBS
• Turmeric powder – 1/2 tsp
• Butter – 1 tsp
● INGREDIENTS REQUIRED FOR PICKLED ONIONS
• Thinly sliced onions – 1 cup
• White vinegar – 1/2 cup
• Salt – 1 tsp
• Red chilly powder – 1/4 tsp
• Black peppercorns – 4-5
• Cinnamon stick – 1 small
● INGREDIENTS REQUIRED FOR CORN-MANGO SALSA
• Corn kernels – 2 cups (frozen or fresh)
• Corn cobb (steamed/boiled) – 1-2 nos
• Diced cucumber – 1 cup
• Diced tomatoes – 1 cup
• Pickled onion slices – 1 cup
• Diced mango (ripe)- 1 cup
• Salt – 1 tsp
• Black pepper powder – 1 tsp
• Lemon juice – 3-4 tsp or juice from 1 lemon
● HOW TO MAKE STEAMED AND BUTTERY CORNCOB
1 – Add water, salt, corncobs, turmeric powder and red chilly powder to a cooker and give steam/boil for 4-5 minutes or until they get soft

2 – When done, take them out keep aside for tempering.
Now, heat butter in a pan. Add 1/4 tsp red chilly powder. Pour this chilly butter over corn cobb. Add lemon juice and cut into desired pieces. Your buttery corncobs are ready to add to the salsa

● STEPS FOR PICKLED ONIONS
1 – Take a glass or ceramic bowl
Add all the ingredients written under pickled onions to it. Mix well and
2 – Keep aside for 30 minutes so onions get all the flavours of vinegar, whole and powdered spices

● STEP BY STEP FOR PREPARING CORN-MANGO SALSA
1 – Steam/slightly boil the corn kernels for 5 minutes and allow them to cool completely
2 – When cooled, take a serving tray or a broad bowl and add all the diced veggies and mango. Also, add both steamed buttery corncob pieces, and steamed corn kernels
3 – Sprinkle some salt, pepper powder, lemon juice and fresh coriander leaves just before serving
