Egg Bhurji with Mushrooms/Anda Bhurjee with mushrooms/Tasty side Dish

Eggs are such versatile ingredients that can be paired with any other to get a wonderful outcome. The ingredients added may be the veggies or the meats. In meat stews, boiled eggs create a wonder, so as with veggies too.  veggies added to the eggs to make a spicy bhurji and this is the best side dish with the main course

Egg dishes are fondly eaten in my family especially the egg or anda bhurji with the main course, so I get the opportunity to do experiments with this by adding onions and peas to make anda-matar bhurji. This time I added mushrooms to it,  as fresh and juicy mushrooms are available these days. The experiment did not disappoint me as everyone became the fan of this egg dish. Above all the dish is easy to prepare under 20 minutes with a few ingredients. This dish can be had in breakfast with crisp bread toast or plain paranthas. It is a pleasure to share the recipe with all my readers

 Ingredients Required

1- Eggs – 6 nos
2- Mushrooms – 6-8 nos (sliced)
3- Finely chopped onions – 1 cup
4- Chopped coriander – 2 tbsp
5- Chopped green chillies – 2 tsp or to taste
6- Salt – 2 tsp or to taste
7- Red chilly powder – 2 tsp or to taste
8- Turmeric powder/haldi – 1 tsp
9- Black pepper powder – 1 tsp
10- Any light cooking oil – 1 tbsp

  Instructions

1- Break the eggs in a bowl and beat them with a spoon or fork and keep aside
 
2- Heat oil in a non-stick pan and add chopped onions and green chillies. Saute for a minute followed by thinly sliced mushrooms and stir fry them. Avoid to overcook them
 
3- Add salt and all the powdered spices and fresh coriander leaves and cook for a while
 
4- Add the whisked eggs and let them cook slowly at low flame
 
5- Scrape the eggs from sides of the pan and bring it to the middle of the pan
 
6- This process will make a soft and fluffy bhurji
 
 
7- When the eggs are cooked 90% switch off the flame. In the heat, the eggs will be cooked completely. Avoid overcooking the eggs
 
 
8- Serve the egg-mushroom bhurji with dal and roti or paranthas
