These easy to make snacks will make our  work easier and hassle free when your guests visit you without informing beforehand. So putting aside the irritation that comes with last-minute, unexpected visitors, these cutlets are the best use of leftover rice resting in our refrigerators.
 often we end up with leftovers, which duly get stowed into the fridge and forgotten! These crisp n tasty cutlets are the best transform to your leftover food.I often call them leftover ka makeover cutlets!! An add of semolina and crushed peanuts make them crispier.

 Ingredients

  1.  Cooked rice – 1 cup
  2. Fine sooji or semolina – 1/2 cup
  3. Finely chopped onions – 2 tbsp
  4. Raw peanuts – 1/4 cup
  5. Chopped coriander leaves – 2 tbsp
  6. Salt – to taste or 1 tsp
  7. Red chilli powder and turmeric powder – 1 tsp each
  8. Aamchur /dry mango powder – 1 tsp
  9. Chaat masala – 1 tsp

 Instructions

1 – Firstly, fry peanuts till light brown and keep aside to cool
When cooled, grind them to coarse powder
2 – In the same grinder, grind coarsly the cooked rice with 2 tsp water and keep aside
3 – Take a bowl and mix everything except oil, to make a dough
4 – Divide the dough into equal portions and shape them into cutlets and refrigerate them to set for 10 minutes
5 – Heat oil at high flame in a kadahi and deep fry each cutlet to golden and crisp
6 – Serve this amazing snacks with chutneys
